This is my first personal blog post on our commercial brand site! A little something you may not know about me is that although I love to photograph food, I absolutely love to cook! I also love to create new healthy recipes for our family especially since we are on the go a lot and can spend hours a day working without breaks. These muffins will keep you full and they have lots of super healthy ingredients in them, not to mention a ton of fiber! The recipe is also versatile. You can literally throw anything you have laying around in your pantry for mix-ins. I would love to hear your feedback and stir in ideas.
1 1/2 cup of wheat bran
1 cup of LOW FAT buttermilk
1/3 cup Applesauce
2/3 cup of brown sugar or molasses
1/2 teaspoon of Vanilla extract
1 cup of Flour or sub half for Whole Wheat Flour
1 teaspoon baking Soda
1 teaspoon Baking Powder
1/2 Teaspoon Salt
Preheat oven to 375
Line paper muffin cups or spray pan
Mix together the bran and the Buttermilk and let stand for 10 minutes
Beat eggs, applesauce, brown sugar, vanilla and add to bran mix. Sift flour, baking soda, baking powder, and salt in a separate bowl and pour into bran mixture. Fold in your stir-ins such as nuts, coconut, blueberries (I like the mini Maine organic blueberries from Trader Joe's) dried apples, dried apricots, dates, and whatever you have in your pantry!
Bake 15-20 minutes
Brush with agave or honey 5 minutes before done.
** IF YOU DON'T HAVE BUTTERMILK YOU CAN MAKE YOUR OWN BY MIXING 2 TEASPOONS OF LEMON JUICE IN LOW-FAT MILK, LET STAND FOR 10 MIN BEFORE ADDING TO BRAN.
** FOR LOWER SUGAR USE SPLENDA BROWNSUGAR MIX
